Gazpacho

Gazpacho, is a cold Spanish tomato based vegetable soup. I tried it with tomato, bell peppers and cucumber with. It was awesome. I guess it tastes great, even when its hot.

Ingredients
Tomato - 2
Onion - 1/2
Red Bell Pepper - 1/2
Cucumber - 1/2
Garlic - 2 cloves
Bread - 1
Butter or Olive Oil - 1 tbsp
Pepper Powder or red chilli paste - as per taste
Salt to taste

Method
Blanch tomatoes and mash them. Soak bread in water/milk and keep it aside.
Heat butter, saute onions, minced garlic and finely chopped bell pepper till raw smell is gone.
Grind all these together with chopped cucumber till its a smooth paste. Add salt and pepper powder/red chili paste and refrigerate for 5 hours.
Serve chilled with some chopped bell pepper, cucumber pieces. Instead you can heat the ground paste with little milk and serve hot with cheese.
