I tried stuffed capsicum, and now its stuffed potato!! This wasnt that tricky....but taste wise, nothing can compare....Potatoes are after all yummy!!
Ingredients
Potato - 2
Onion - 2
Tomato - 2
Capsicum - 1
Sweet Corn - a little (optional)
Green Peas - a little (optional)
Raisins - 5
Cashew Nuts - 5
Ginger Garlic Paste - 1 tsp
Chat Masala - a pinch
Chilli Powder - 1 1/2 tsp
Coriander Powder - 1 1/2 tsp
Cumin Powder - 1 1/2 tsp
Cumin Seeds - 1 tsp
Garam Masala - 1/2 tsp
Kasoori Methi - 1 tbsp
Salt to taste
Oil for cooking
Method
Cut potatoes into half and boil them till cooked. Dont let it become mushy. Scoop out a cavity, make sure the sides and bottom are intact.
Dab some corn flour on the outer surface and the potato shells. Keep it aside.
Saute one finely chopped onion till golden brown, add capsicum, sweet corn, peas and cook.
Mash the scooped out potato trimmings along with the cooked vegetable mix, cashew, raisins, chat powder, half a tsp each of chilli powder, coriander powder, cumin powder, salt and may be some cheese/paneer. Fill this into the fried potato shells.
Heat oil, add remaining onion, ginger garlic paste and saute till golden. Add tomatoes and cook till mushy. Allow to cool and grind into a fine paste.
Heat oil, add cumin seeds - when it splutters add the onion tomato paste, garam masala, 1 tsp each of red chilli powder, coriander powder, cumin powder and cook on medium heat till oil oozes out. Add water if necessary.
Add the stuffed potato shells and simmer for 5 minutes. Add kasuri methi, coriander leaves and serve hot with any bread of your choice.
