Rumali Roti

I was always awed when I used to see chefs flipping those huge rumali rotis in air and landing it perfectly on the upside down kadai. When ever we visit VV Puram I make sure I have the rumali roti and chana from one of the vendors. I wanted to try it once, to check if its worthwhile to prepare it at home!! Yes it definately is. You get the same soft thin rotis!!!

Ingredients
All Purpose Flour - 2 cups
Curd - 2 tbsp
Soda Bi-Carb - a pinch
Salt to taste

Method
Knead all the ingredients together with very little water if needed into a smooth dough and let it rest for an hour.
Knead again and divide into 10 portions and roll out into thin sheets.
Cook on a inverted kadai until light brown spots begin to appear.
Cook on high heat and flip quikly. If cooked on uniform heat, the roti will be ready in less than half a minute. Serve hot!!
