Another Blog Hop Wednesday, and I made sure it goes off without a glitch. Huh!! So Im again paired with Sumedha of Sumee's Culinary Bites and this time I tried the Veggie Quesadilla. I always loved quesadillas and tried to make it a bit indianized. So here you go!!
Ingredients
Corn Flour - 1 cup
All Purpose Floue - 1/4 cup
Cheese Slices - 2
Onions - 1
Bell Pepper(Red and Green) - 1 each
Ginger Garlic Paste - 1 tsp
Pepper Powder - 1 tsp
Salt to taste
Oil for cooking
Water for dough
For the green chutney
Coriander leaves - a handful
Green Chili - 2
Salt to taste
For the date chutney
Jaggery - 2 tbsp
Dates - 6-7 deseeded
Tamarind - lemon sized
Red Chili Powder - 1/2 tsp
Cumin Powder - 1/2 tsp
Salt to taste
Method
For the chutneys
Grind all the ingredients for the green chutney into a thick paste.
Soak tamarind in a cup of warm water and boil it in a heavy bottomed pan for 5 minutes.
Grind along with dates into a paste and strain through a sieve.
Heat jaggery with very little or no water and remove the impurities. Mix with tamarind date mix and allow to boil till its thick enough.
Add red chili powder, cumin powder, salt and your date chutney is ready.
For the quesadilla
Mix cornflour, all purpose flour together with a pinch of salt and knead into a soft and smooth dough.
Make small balls of the dough. Flatten like small chapathis using a rolling pin and cook on both sides in a tawa. Prepare all tortillas and keep it aside.
Heat oil, add onions, ginger garlic paste, capsicum and saute till cooked. Add salt and pepper and set aside.
Take a tortilla, spread green chutney on one half and the date chutney on the other.
Place the filling on one half and place the cheese slice on top of it.
Close the other half on top of this, dab some ghee/oil on both sides and cook till crispy.
Serve with any dip of your choice. Tastes yum without a dip ofcourse.
