Arbi or Colocasia is a hot favorite at my place. My FIL says, that his mom used to prepare the best seppankizhangu fry he has ever tasted!!
Ingredients
Colocasia - 500 gms
Turmeric Powder - 1/4 tbsp
Red Chili Powder - 2-3 tbsp
Mustard Seeds - 1/4 tbsp
Urad Dal - 1/4 tbsp
Asafoetida - 1/4 tbsp
Curry Leaves - a little
Salt to taste
Oil for cooking
Method
Pressure cook arbi till soft. Transfer into cold water and peel off the skin.
Cut into thinner slices or into halves and keep aside.
Heat oil in a pan, add mustard seeds and when it splutters add urad dal, asafoetida and curry leaves.
Add sliced arbi, turmeric powder, chili powder and salt. Keep on low heat and allow it to roast. Keep stirring, so that the dish doesnt get burnt. Yummy seppankizhangu fry is ready.
Serve it with sambar or more kolambu.
