Pav Bhaji is a fast food dish from Maharashtra especially Mumbai. Being a Mumbaikar during most of my childhood days the road side jalebis, pav bhaji's and vada pav's are my favorite. My family we always used to visit a fast food shop near by for pav bhaji's. I thought why not try it once at home and ended up with a really nice dish.
Pav
Onion - 2 (medium sized)
Tomato - 2 (medium sized)
Potato - 4 (medium sized)
Capsicum - 1 (medium sized)
Peas - 1 cup
Ginger-Garlic paste - 1 tbsp
Chili powder - 2 tbsp
Pav Bhaji Masala - 1 tbsp ( I used Everest)
Salt to taste
Oil for cooking
Butter (for toasting pav, for garnishing in the bhaji)
Method
Boil all the vegetables except onion and tomato and smash them very well. Keep it aside.
Heat oil in a pan, add onions and saute till golden brown.
Add ginger-garlic paste and saute well.
Add the tomatoes and cook till they become mushy.
Add chili powder, pav bhaji masala, salt and the mashed vegetables and stir well.
Add water and simmer for 10-15 minutes till the gravy gets a nice consistency.
Add a cube of butter and serve with finely chopped onions, coriander and lime juice.
Toast the pav with butter and serve hot.
