Bhajji's are south indian fritters, an ardent favorite during the rainy season. Its very easy and quick to make incase you have adhoc visitors. Today it was a snack box day for the guys at our shop. So we made Chilli Bhajjis. Bhajji's can have variants - potato, onion, brinjal, raw banana, carrot, capsicum(ball peppers). Here goes the recipe for hot yummy Bhajjis.
For the batter
Gram flour - 2 cup
Rice flour - 1/2 cup
Dosa Batter - 1/4 cup (optional- gives a nice puffiness)
Baking Soda - a pinch
Red Chili Powder - 3 tbsp
Asafoetida - 1/4 tbsp
Salt to taste
Oil for frying
Method
Mix all the ingredients together with some water to dosa batter consistency.
Dip the vegetable in the batter nicely.
Heat oil in a deep frying pan and add the vegetables coated with batter.
Fry till both sides are cooked well.
Serve hot with coconut chutney.
Tips
Use 1/4 cup rice flour if you are adding dosa batter.
Baking Soda keeps the Bhajjis nice and crispy.
Prepare the batter just before frying, it would absorb lesser oil.
