Vegetable Jalfrezi

I have tried many a side dishes for roti's, but never a mixed vegetable gravy. It had been haunting me for a long time, until today. I tried this recipe from a cookbook and luckily it turned out well. Being separated from the family, my hubby decided that the menu's in Bangalore where the family is and in KL will be the same to the extent we can manage. And so we did on day 1, since the new deal. A simple vegetable Jalfrezi!!

Cheesy Carrot Kati Roll

Kati rolls are yummy on-the-go snacks. We had planned a movie nite at home, and needed something easy to munch on, rather than a fussy plate. So I prepared the stuffing and the rolls ahead of time and microwaved them!!!

Carrot Onion Curry

Carrots are something we never miss on our weekly shopping. Usually we go for a kosmalli but this time we prepared a carrot and onion curry. Tastes awesome with hot rasam and papad which was our dinner for tonite.
Ingredients
Carrot - 250 gms
Onion - 3/4
Mustard Seeds - 1 tsp
Urad Dal - 1 tsp
Curry leaves - a little
Red Chili Powder/Sambar Powder - 2 tsp
Salt to taste
Oil for cooking

Method
Heat oil in a pan, add mustard seeds and once it splutters; add urad dal, curry leaves, and onions.
Once the onions turn golden brown, add steam cooked carrots, salt, chili powder and saute. Serve Hot.

Carrot Kheer

Carrots are so healthy and it was my hubby's star birthday and I thought carrot kheer might be to his liking.
Ingredients
Carrots - 3 medium sized
Milk - 1/2 litre
Sugar - 1 cup
Almonds - 2/3
Saffron - a couple of strands


Method
Boil and mash carrots into a fine paste.
Add water in a kadai and cook the carrots till raw smell is gone.
Add sugar and stir well. Once the sugar is dissolved add milk, cardamom powder and saffron.
Refrigerate and serve cold.
