Vegetable Jalfrezi
I have tried many a side dishes for roti's, but never a mixed vegetable gravy. It had been haunting me for a long time, until today. I tried this recipe from a cookbook and luckily it turned out well. Being separated from the family, my hubby decided that the menu's in Bangalore where the family is and in KL will be the same to the extent we can manage. And so we did on day 1, since the new deal. A simple vegetable Jalfrezi!!

Veg Cheese Quesadillas
Another Blog Hop Wednesday, and I made sure it goes off without a glitch. Huh!! So Im again paired with Sumedha of Sumee's Culinary Bites and this time I tried the Veggie Quesadilla. I always loved quesadillas and tried to make it a bit indianized. So here you go!!

Mushroom Tikka Masala
Mushrooms are lovely. We always used to prepare button mushrooms with onion. Last week during our veggie shopping, we got mushrooms and were thinking of preparing risotto ai fungi. Suddenly today a change in plan, inspired by A curry of a life we prepared Mushroom Tikka Masala. Turned out really well.
Ingredients
Button Mushrooms - a handful
Bell Pepper(Capsicum) - 1/2 (I prefer green)
Onion - 1
Tomato - 2
Cumin Seeds - 1 tsp
Red Chili Powder - 3 tsp
Turmeric Powder - 1 tsp
Dhaniya Powder - 1 tsp
Yoghurt - 1/2 cup
Salt to taste
Oil for cooking
Method
Whisk yoghurt, half a tsp turmeric powder, 1 tsp red chili powder together and mix mushrooms and chopped capsicum. Keep it aside for 15-20 minutes.
Heat oil in a pan, add cumin seeds, finely chopped onions and saute till golden brown.
Add tomatoes and saute, till mushy.
Add turmeric powder, red chili powder, dhaniya powder, salt and mix well. Add some water and allow to boil.
When the oil seperates from the tomato gravy, add the marinated mushrooms and let it boil. Add some fresh cream and cheese.
Switch off heat and serve with hot chapathis and lemon wedges.

Capsicum Sambar
Capsicum sambar is slightly different from the usual sambar. We add tomatoes in it. And the flavor that capsicum adds to any dish in incomparable for me.
Ingredients
Capsicum - 1
Tomato - 1
Toor Dal - 1/2 cup
Tamarind - size of a lemon
Sambar Powder - 1 1/2 tbsp
Mustard Seeds - 1 tsp
Fenugreek Seeds - 1 tsp
Asafoetida - 1/4 tsp
Salt to taste
Oil for cooking
Method
Heat oil in a pan, add fenugreek seeds, mustard seeds and once it splutters; add capsicum and saute.
Once capsicum is half cooked, add tamarind extract, sambar powder and salt.
Add pressure cooked toor dal, when the raw smell is gone. Add tomatoes and allow to boil for 2-3 minutes.
Garnish with curry leaves and serve with rice.

I go gaga over capsicums. Or so they tell me, people in my family.
Ingredients
Boiled raw rice - 3 cups
Capsicum - 250 gms (Green/Red/Yellow Peppers)
Masala powder - 2 tbsp
Pearl Onions 100 gms
Coriander Leaves - a little
Curry Leaves - a little
Salt to taste
Oil for cooking
For the masala powder
Urad Dal - 1 tsp
Channa Dal - handful
Cumin Seeds - 1 tsp
Red Chilies - 7
Black Pepper - 1 tsp
Asafoetida - a pinch
Method
Dry roast all the masala powder ingredients and powder coarsely.
Heat oil in a pan, add finely chopped peppers and cook till soft. Add pearl onions to it and saute well.
Add the masala powder, salt, coriander leaves and curry leaves.
Mix rice with this and enjoy with cucumber/tomato raitha.
