Ever since I saw Khana Khazana on Zee I always wanted to try stuffed tomatoes. But Capsicum being a favorite, I tried this instead.
Ingredients
Capsicum - 2
Boiled Vegetables - 1 cup
Onion -1
Coriander Powder - 1 tsp
Cumin Powder - 1 tsp
Red Chili Powder - 1 tsp
Salt to taste
Oil for cooking
Method
Heat oil, add onions and saute. Add boiled/smashed vegetables and mix well.
Add coriander powder, cumin powder, chili powder and salt and mix well. Keep it aside
Cut the capsicum into two, remove the seeds and put them in boiling water for 5 minutes.
Stuff the filling into the capsicum shell and heat it on a tawa or kadai, till the outer parts of the capsicum are cooked well and have blisters.
Serve hot with chapathis.
