Aval Aapam

My mother makes these soft and spongy aapams from flattened rice. When my cousins visited us, they used to always request her to prepare this. These were favorites in the family and my mom's trade mark recipe as well.

Ingredients
Raw Rice - 1 cup
Boiled Rice - 1 cup
Flattened Rice - 1 cup
Urad Dal - 1 tbsp
Fenugreek Seeds - 1 tsp
Salt to taste
Oil for cooking

Method
Soak raw rice, boiled rice, fenugreek seeds, urad dal for 2-3 hours. Soak flattened rice for an hour.
Grind all these together, with salt and let it ferment. Once fermented, mix well and add some water to make it to a flowing batter consistency. Fermentation times depend upon the climate!!
Heat tawa, pour a laddle full of batter and spread into a thick and small circle. Grease with oil, close with a lid and cook on low flame. You will see pores appearing once the batter is spread.
It will take 3-4 minutes to cook well. Serve hot with onion-tomato chutney.
