Samosa

Whenever we pass through Sri Ram Sweets near Jayadeva in Bangalore, we stop by to get some samosas and jalebi!! Hot Samosas are always on the menu when its a rainy day.

Ingredients
For the Chutney
Coriander Leaves - a handful
Tamarind - an inch
Lemon Juice - 1 tbsp
Dates - 4
Green Chili - 1
Salt to taste
For the filling
Boiled Potato - 1
Boiled Carrot - 1
Onion - 1
Peas - a handful
Corn - a handful
Cumin Seeds - 1 tsp
For the outer cover
All Purpose Flour - 1 cup
Salt - a pinch
Water for the dough
Oil for deep frying

Method
Knead flour, salt with very little water into a smooth dough. Coat it with a tbsp of oil and let it rest for half an hour.
Grind all the Ingredients for the chutney with very little water into a fine paste.
Heat oil, add cumin seeds and saute onions, peas, corn. Add mashed potato, carrot, paste and mix well.
Make small balls of the dough and flatten to form a oval shape.
Cut into two parts. Take one part and dab some water on the cut end. Join the ends together to form a cone.
Place the filling inside the cone. Dab some water on the edges of the cone and bring them together or fold it over one another in the form of a samosa. I have made a step by step collage for the pictorial explanation of making the cone!!
Deep fry and serve hot. These dont require chutney's as I added the chutney to the filling itself.

Bon Appetit!!
