In our family more than the usual kozhukattai's, people throng for the amini kozhukattai. In olden days people used to prepare the kozhukattai's and if there's dough remaining, they used it to make the amini kozhukattai's, but now my MIL had to make sure she has enough dough for the amini. Once its prepared its the first thing to get emptied. Such is the craze.
Ingredients
Dough for the kozhukattai - 1 cup
Sambar Powder - 1 tsp
Chili Powder - 1 tsp
Mustard Seeds - 1 tsp
Urad Dal - 1 tsp
Salt to taste
Oil for cooking
Method
Make small balls of the rice dough, and keep it aside.
Heat oil in a pan, add mustard seeds and once it splutters; add urad dal and the rice balls. Cook on low heat.
Add sambar powder, chili powder and salt and shake the pan so that all of it gets mixed. Donot use a spoon to stir. Else all the rice balls with break.
Keep shaking the pan once in a while to see that all the sides are cooked properly.
Once its crispy, switch off heat. Serve hot.
