Sweet Appam

Avani Avittam and Gokulashtami are two festivals when we prepare Sweet Appams. Appams are also a fovorite of Lord Ganesha. Appam or Paniyaram can be salty or sweet. The sweet appam is a very quick and easy to make.
Ingredients
Wheat Flour - 1 cup
Maida (All Purpose Flour) - 3/4 cup
Rice Flour - 1/2 flour
Ripe Banana - 1/2
Jaggery - a handful (grated)
Coconut - 1 tbsp (grated)
Cardamom powder - 1 tsp

Method
Smash the banana finely and mix it with the flour, along with grated coconut and cardamom powder.
In a pan dissolve the jaggery in 1/4 glass of water and filter to remove any impurities.
Mix it well with the flour to a dosa batter consistency. Add some water if necessary. Set it aside for half an hour.
Generally we use a appakarai to fry the appams, but incase you dont have one, you can just heat oil in a pan and pour a spoonful of batter and let it puff up, flip to the other side and let it fry.
Deep fried sweet appams are ready.
