Whenever I think of Rajasthani cusine, the first thing that comes to my mind is Dal Baati-Churma. Nothing else can ever top the list. When I visit Rajdhani in Forum mall, I make sure I have this yummy delicacy. But this is not about Dal Baati or Churma, its another interesting pinched roti I tried from Pinks Recipe Dairy for Blog Hop Wednesday. I have never ever heard of this word any where. Even in any rajasthani restaurant I have been to. Interesting to pinch roti's and get a totally different kind of texture. Many thanks to Radhika for creating this forum, and help realize different stuff from varying origins.
Ingredients
Wheat Flour - 2 cups
Gingelly Oil - 4 tbsp
Salt to taste
Method
Knead all the ingredients together to make a hard dough.
Make small balls of it and roll into a thick roti.
Prick with a fork on one side and place it on a tawa. Press with a piece of cloth and cook on both sides.
When one side is having brown spots, pinch the other side of the roti. You will see the pinches like small hills of dough peeping out through out the surface.
Flip the roti, with the hill side facing down and cook for 5 minutes. The roti will be brown in color when cooked properly.
Remove from heat and pour 2 tbsp of ghee on the roti. Serve hot!!

Very new recipe to me. Loved the way it is prepared too..
wow u really tried this recipe.......congrats and it looks quiet good as well. U wont find this any restaurant but it is a regular meal in any marwari house.
