Semolina Tikkis

I was browsing for some menu for tonight's dinner and came across this healthy snack at Tarla Dalal. Looked different yet appealing to me. Since I had nothing much to do I prepared these lovely munchies for dinner.
Ingredients
Onion - 1
Tomato - 1
Semolina (Rava) - 1 cup
Ginger Garlic Paste - 1 tsp
Red Chili Powder - 1 1/2 tsp
Coriander Seed Powder - 1 tsp
Rice Flour - 1 tbsp
Mustard Seeds - 1 tsp
Cumin Seeds - 1 tsp
Sugar - a pinch
Salt to taste
Oil for cooking

Method
For the stuffing
Heat 2 tbsp oil in a pan, add mustard seeds; once they splutter add cumin seeds, finely chopped onions, ginger garlic paste and saute.
Add tomatoes, 1 tsp chili powder, coriander seed powder and salt and saute till the stuffing is neither saucy nor thick and keep aside. (Add a tsp of rice flour if the stuffing is saucy)
For the tikkis
Boil 1 cup of water. Switch off the heat and add semolina, 1/2 tsp chili powder, salt and a pinch of sugar. Mix well till no lumps are formed.
Add a tsp of rice flour (or more if needed) and a tsp of oil and knead to a smooth dough. Let it rest for 10 minutes.
Make small balls of the dough and flatten it with hand or using a rolling pin and some oil. Place a portion of the stuffing in the center and seal the stuffing by bringing together the edges.
Flatten using hands like a flat tikki. Cook on a non stick tawa till golden brown on both sides. Use very minimal oil if necessary. I used no oil.
Serve hot with tomato ketchup.

Note
Instead of the oinion/tomato filling, you can use boiled potatoes/green peas/corn or literally anything that would suit you.
